These roasted stuffed apples are delicious and full of interesting textures! Use your favorite apples and stuff them with a combination of PB2 Crunchy Powdered Peanut Butter, peanuts, oats and more for the best sweet-salty and satisfying side dish.
Instructions:
Make the Filling
- Combine the rolled oats, PB2 Crunchy Powdered Peanut Butter, sugar, chopped peanuts, kosher salt and ground in a bowl. Stir together until incorporated.
- Add the melted butter to the dry ingredients. Stir until the mixture is just combined.
Roast the Apples
- Preheat the oven to 350°F. Fill a baking dish that has 2”+ tall sides with the water, and set aside.
- Core the apples using an apple coring tool (or a paring knife and a spoon), and prepare to fill them.
- Once the apples have been cored, carefully spoon the filling into them and place the in the prepared baking dish.
- When the apples have been filled, cover the baking dish with a piece of aluminum foil.
- Bake the apples for 30 minutes covered, then remove the foil and bake an additional 15-20 minutes, or until the streusel topping has browned slightly and smells fragrant.
- Remove from the oven, and let cool for 10-15 minutes, then serve warm.
Notes:
- Store leftover roasted apples covered tightly in plastic wrap in the refrigerator for 2-3 days.
