Ingredients

Apples

  • 8 apples, medium-sized, cored
  • ½ cup water

Filling

  • 4 tablespoons unsalted butter, melted
  • ¼ cup rolled oats
  • ¼ cup PB2 Crunchy Powdered Peanut Butter
  • 2 tablespoons granulated sugar
  • ¼ cup chopped peanuts
  • ¼ cup dried cranberries
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground cinnamon

These roasted stuffed apples are delicious and full of interesting textures! Use your favorite apples and stuff them with a combination of PB2 Crunchy Powdered Peanut Butter, peanuts, oats and more for the best sweet-salty and satisfying side dish.

Instructions:

Make the Filling

  1. Combine the rolled oats, PB2 Crunchy Powdered Peanut Butter, sugar, chopped peanuts, kosher salt and ground in a bowl. Stir together until incorporated.
  2. Add the melted butter to the dry ingredients. Stir until the mixture is just combined.

Roast the Apples

  1. Preheat the oven to 350°F. Fill a baking dish that has 2”+ tall sides with the water, and set aside.
  2. Core the apples using an apple coring tool (or a paring knife and a spoon), and prepare to fill them.
  3. Once the apples have been cored, carefully spoon the filling into them and place the in the prepared baking dish.
  4. When the apples have been filled, cover the baking dish with a piece of aluminum foil.
  5. Bake the apples for 30 minutes covered, then remove the foil and bake an additional 15-20 minutes, or until the streusel topping has browned slightly and smells fragrant.
  6. Remove from the oven, and let cool for 10-15 minutes, then serve warm.

Notes:

  • Store leftover roasted apples covered tightly in plastic wrap in the refrigerator for 2-3 days.
