Apple Peanut Butter Overnight Oats

Creamy, peanutty overnight oats with light apple flavor. So comforting and easy for any weekday morning!

  • Servings: 4 (8 oz. mason jars)
  • Prep time: 5 minutes
  • Refrigeration time: 10-12 hours
  • Total time: 10 hours 5 minutes

Ingredients:

  • 1 cup milk (dairy or non-dairy OK)
  • ½ cup PB2 Crunchy Powdered Peanut Butter
  • ½ cup unsweetened applesauce
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 2 cups extra thick rolled oats
  • 1 large apple, sliced thin

Instructions:

  1. Pour the milk, PB2 crunchy powdered peanut butter, applesauce, maple syrup, vanilla extract and ground cinnamon into a large bowl. Whisk until incorporated.
  2. Add the rolled oats to the milk mixture. Stir to combine.
  3. Divide the oats between four 8 oz. mason jars or containers that can be sealed.
  4. Pour extra liquid on top, stirring with a spoon or a butter knife to combine.
  5. Cover, and refrigerate overnight.
  6. Enjoy the oats cold the next morning with thinly sliced apples on top.

Notes:

  • To make this recipe vegan, use your favorite non-dairy milk. To make gluten free, use gluten free rolled oats.
