5-Minute Chunky Vegan Queso

In a pinch and need something quick and easy? Look no further, this 5-minute chunky vegan queso is not only easy but is super delicious! It comes together in about 5 minutes and has less than 10 ingredients, including PB2 Cashew! PB2 Cashew Powder is cashew butter re-imagined! This is literally a single-ingredient product- just 100% all-natural cashews, and that’s it. No added sugar, no added salt, no added preservatives. Score!


  • ¼ tsp chili powder

  • ½ tsp cayenne pepper

  • ¼ tsp smoked paprika

  • 1 tsp cumin

  • 2 cloves garlic

  • 5 tbsps nutritional yeast

  • tbsp soy sauce

  • 1 cup water

  • ¾ cup PB2 Cashew Powder

  • ½ cup Rotel

  • Cilantro, for garnish

  • Jalapenos, for garnish


  1. Combine chili powder, cayenne pepper, smoked paprika, cumin, garlic cloves, nutritional yeast, soy sauce, water and PB2 cashew powder in a food processor. Blend until smooth, about 10-15 seconds.
  2. Pour queso into a bowl and stir in rotel. Garnish with cilantro and jalapenos, optional.
