Ricotta Toast with Peaches and Pistachios

For the Ricotta
- 1 cup PB2 Cashew Powder
- 1/4 cup oil
- 1/4 tsp garlic powder
- 1 tbsp lemon juice (the juice of about 1/2 small lemon)
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp nutritional yeast
For the toast
- Sourdough bread (or bread of choice)
- 1 peach sliced
- Honey for drizzling
- Pistachios, crushed
- Add all vegan ricotta ingredients to a bowl and mix until fully combined.
- Spread vegan ricotta onto toasted bread. Add sliced peaches, drizzle honey, and top with crushed pistachios.
