Saucy Roasted Chicken Thighs with Honey-Soy Peanut Sauce

These perfectly cooked chicken thighs are tender, flavorful and drenched in a beautifully balanced savory sauce. Serve with your favorite veggies and rice for a delicious meal! Don’t forget to spoon extra sauce over the chicken and rice before serving.

Ingredients:

Chicken Thighs

  • 1 tablespoon avocado oil (or another high smoke point oil)
  • 4 bone-in, skin-on chicken thighs
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Honey Soy Peanut Butter Sauce

  • ½ cup chicken broth
  • 2 tablespoons PB2 Original Powdered Peanut Butter
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon cornstarch

Instructions:

  1. Preheat oven to 375ºF.
  2. Heat the avocado oil in a cast iron skillet (or another oven-proof skillet) over medium-high heat.
  3. Season the chicken thighs with salt and pepper on both sides.
  4. Place the chicken thighs skin-side down in the skillet, and sear for 4-5 minutes, or until the skin is golden brown and releases easily from the pan.
  5. Flip the chicken thighs, and cook for another 4 minutes.
  6. Transfer the chicken thighs to the oven. Bake for 20-25 minutes, then check the internal temperature of the chicken. (The internal temperature should be 170F.)
  7. As the chicken thighs cook, combine the broth, PB2 Original Powdered Peanut Butter, soy sauce, honey, rice wine vinegar, garlic, ginger and cornstarch in a bowl. Whisk to combine.
  8. Remove the chicken thighs from the oven, and pour the sauce directly into the pan. It will bubble in the HOT skillet. Give it a few stirs until it thickens. (This should happen without you having to turn on the stovetop.)
  9. Once the sauce is ready, serve warm over rice with your favorite steamed vegetables.

Notes:

  • This recipe can be halved for a smaller serving.
