Crunchy Asian Peanut Butter Dressing
Yields 1 serving
½ cup PB2
2 tablespoons lime juice
3 tablespoons honey
1 1/2 tablespoons rice wine vinegar
1 1/2 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon sriracha
1/2 teaspoon ginger
1 clove garlic
¼ cup water
1 teaspoon salt
1 teaspoon black pepper
¼ teaspoon red pepper flakes, optional
¼ cup chopped peanuts
¼ cup green onion, white and green, chopped
Add the PB2, lime juice, honey, vinegar, soy sauce, sesame oil, sriracha, ginger, garlic,
water, salt, and pepper to a blender.
Pulse until smooth and well combined, about 5 minutes. Add additional water or vinegar
to thin our dressing if too thick.
Pour dressing into a small bowl and stir in the peanuts and green onion.
Serve as a salad dressing or dipping sauce.
